A Simple Recipe for Balance 🥘
Here’s a healthy, simple recipe that uses flavorful ground turkey or chicken, veggies, and fresh herbs—a comforting meal you can enjoy any day of the week. When possible, opt for Certified Organic ingredients to ensure you’re nourishing your body with the best quality. 🌱
Ground Turkey & Veggie Stir-Fry with Fresh Herbs
Ingredients:
1 lb Certified Organic ground turkey or chicken
2 tbsp olive oil
1 shallot, finely chopped
1 medium sweet potato, peeled and diced
2 large handfuls of fresh spinach
2 cloves garlic, minced
1 tbsp fresh thyme or parsley, chopped (or any fresh herbs you like)
Salt and pepper to taste
Optional: serve with a side of brown rice or cauliflower rice
Instructions:
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground turkey or chicken, cooking until browned and fully cooked through. Once done, set aside.
In a separate large skillet, heat the remaining tablespoon of olive oil. Add the shallot, sweet potato, and garlic. Sauté for 7-10 minutes until the sweet potatoes are tender.
Stir in the spinach and fresh herbs, season with salt and pepper, and cook for another 2-3 minutes until the spinach wilts.
Add the cooked turkey or chicken back into the skillet with the veggies, mixing everything together and allowing the flavors to meld for another 2 minutes.
Serve the stir-fry on its own or with a side of brown rice or cauliflower rice for extra fiber and nutrients.
